Organic Matcha Green Tea

Over time, I’ve become quite the coffee lover (or dare I say, addict?) but there is a part of me that wants to be a tea addict, mainly for the health benefits…and because it doesn’t stain your teeth. 🙂 So, when I was given the opportunity to review Kiss Me Organics’ Organic Matcha Green Tea Powder, I was excited to give it a try.

Organic Matcha Green Tea Powder is 100% organic, tested for purity, and contains more than 137 times the antioxidants in regular brewed tea. Yes, 137x!  This Matcha powder is only available on Amazon and comes with a recipe guide that they give all first time customers.  You wouldn’t believe all of the recipes they came up with that can use the Matcha Green Tea Powder…everything from smoothies to salmon. No joke.

I decided to try a smoothie first (recipe below).  I have to admit, my first attempt tasted a little too strong for me and it was hard to get past the green tea taste.  I decreased the amount of powder in the next one and that helped a lot!  I paired it with eggs for some protein for breakfast and it was really refreshing!

The next recipe I decided to try was a green tea latte (recipe below). You know how I love my lattes. 🙂 Some of the recipes I’ve found call for boiled water and frothed milk but I took the easy (ahem, lazy) way out and just heated up the liquids in the microwave.  It was still delicious!  It gave me the energy I needed, without the crazy-caffeine feeling. Don’t get be wrong, I’m not saying I’m giving up my coffee, but it’s nice to know there is a good alternative out there!

I love that it comes in powder form, so you can literally add it to almost any recipe for the antioxidant benefits.  The free recipe guide was a great added bonus because it has a ton of recipes I would never think of that include this Matcha Green Tea Powder.  Also, each serving size is only about 1/2-1 tsp (depending on the recipe) so this bag will last me a while!

Matcha Green Tea Smoothie

  • 1 frozen banana
  • 1 green apple
  • 1 heaping handful spinach
  • 1/2-1 tsp Organic Matcha Green Tea Powder
  • 1 cup coconut milk

Directions

Blend and enjoy!

Matcha Green Tea Coconut Latte

  • 1/4 cup hot water
  • 1/2-1 tsp Organic Matcha Green Tea Powder
  • 3/4 cup hot coconut milk
  • honey or sweetener (optional)

Directions

Heat water on the stove or in the microwave.  Whisk green tea powder with water then add milk and heat again, add sweetener.

WIAW #13: Whole30 – Week 2

Hey hey!

Well, we are knee deep in the Whole30, 16 days down, 14 to go!  No turning back now.  Week 2 was much more tolerable than Week 1. No breakdowns and only minor panic attacks.  I kid, I kid. 😉

Both Matt and I are feeling good, we have more energy and aren’t really having too many cravings, except for the ever-present chocolate for me.  Not sure that will ever go away…and I’m ok with it, because a life without chocolate is a life without living.  Let’s be honest.

I switched it up a lot this week and made sure to have different meal options – something other than just chicken, veggies, salmon and eggs.

On the menu:

Breakfasts and snacks have pretty much stayed the same: almond butter, apples, berries, dried fruit, nuts, veggies, guacamole, etc. LaraBars have been a saving grace at times too, although they are supposed to be used as more of an emergency food, according to the “rules”.  I like to have them as a pre-workout option.  I usually break off part of it before heading to the gym in the morning.  It’s a much better option than a hard-boiled egg and/or almonds at 5am. For me, that’s less than appetizing. 🙂

Sweet Potato Chili  (SO delicious, you won’t even miss the beans!) I paired it with kale salad…which isn’t as good without the Stevia, I have to admit.

DSC02012Baked Cod (dipped in egg, covered in almond flour and baked at 400 for about 20min.), paired with avocado and veggies.

DSC02013Paleo Beef and Broccoli with cauliflower rice

Ingredients:

  • 1 lb flank steak
  • 2 heads broccoli
  • 1 small onion, chopped*
  • 4 cloves garlic, chopped*
  • 3 tbsp coconut aminos
  • 1 tsp ginger
  • 1/2 tsp ground red pepper
  • 1/2-1 tsp crushed red pepper
  • salt/pepper

*I used garlic, onion and shallots already chopped from Trader Joe’s

Directions:

Cut broccoli into florets and steam, set aside.  Heat the olive oil and saute the garlic/onion for about 1 minute, add the steak and saute until almost cooked through.  Add remaining ingredients and stir until combined then mix in the broccoli florets.

Cauliflower Rice

Ingredients:

  • 1 head cauliflower
  • 1/2-1 small onion, chopped
  • 1 tbsp olive oil

Directions:

Cut the cauliflower into florets and pulse in a food processor until it looks like grains of rice.  If you don’t have a food processor, you can probably use a blender or cheese grater.  Saute the onion in the olive oil, add the cauliflower and saute until soft.  Add the spices of your choice.

WIAW #11: Butternut Squash Chili

Time for another round of What I Ate Wednesday! I’ll apologize in advance for the lack of photos this time around…it’s all the same, right?

Breakfast

Scrambled eggs with more roasted breakfast “potatoes”. This time, the mix included sweet potatoes and turnips….I never thought I would like turnips, but they are quite tasty!

I also grabbed a sugar-free caramel almond milk latte (that’s quite the mouthful, isn’t it?) on the way to work. I stayed pretty full until lunch, but also grabbed a small handful of trail mix mid-morning.

Lunch

I went to lunch with some co-workers and my boss at Crazy Bowls and Wraps, where I ordered a chicken fajita bowl, sans rice…along with a few tortilla chips.  It was really good but a little heavy on the beans and cheese, which I wasn’t expecting. No pics this time. Didn’t want to freak my co-workers out. 🙂

Dinner

Dinner was the highlight of my day. I found this recipe for Paleo Butternut Squash Chili and had to give it a try, especially since we are dealing with yet another snow day around here….is it spring yet?!

Paired with a kale salad, it was a delicious meal…oh, and a piece (ok, two) of THIS deliciousness. Ohmygoodnessgracious this stuff is no joke. Sorry for the blurred pic. I blame the chocolate.

I only made a couple of small changes to the recipe, but here’s how I made the chili!

DSC01961Ingredients:

  • 1 lb grass-fed ground beef
  • 1 lb steak, cubed
  • 3 cups butternut squash, cubed
  • 1 green bell pepper, diced
  • 1/2 red bell pepper, diced
  • 1 yellow onion, diced
  • 2 15oz cans fire roasted tomatoes with green chiles, diced
  • 1 6oz can tomato paste
  • 1 15oz can beef broth
  • 2 tbsp chili powder
  • 1 tbsp Texas chili powder (recipe calls for Chipotle but I couldn’t find it)
  • 1 tbsp cumin
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp crushed red pepper
  • salt- the recipe doesn’t call for it but I added some to my bowl (I’m a salt lover and my husband, not so much ;))

Directions:

Chop all vegetables. Brown meat in a skillet for about 5 minutes, add vegetables and cook for another 5 minutes, or until veggies are cooked about halfway.  If your roasted red peppers aren’t already diced, add them to a food processor or blender and pulse until diced (do not drain). Add the remainder of ingredients and meat/veggie mixture into a pot and simmer for 1 hour, or until the squash is tender.

Again, I do not always post every single thing I eat throughout the day, just the noteworthy meals.  I don’t want to bore you too much to death… 😉

Paleo Sloppy Joes

It’s Fridaaaay!  The weekend couldn’t come soon enough.  Tomorrow morning my mom, sister and I are having our annual cookie baking extravaganza- one of my favorite traditions.  I’ll be sure to share a few of her recipes before the holidays are over!  Then on Saturday Mizzou is playing Auburn in the SEC Championship game!  So, that means I’ll probbbbably be spending the afternoon in front of a tv with a cold beverage and (not so skinny) plate of food in front of me.  Pretty sure that’s a football Saturday rule.

Backing up a little to earlier this week, when the thought of a typical week’s worth of chicken, fish and veggies sounded far less than appetizing, I set out to find a recipe that was hearty, yet healthy, AND was something both Matt and I would like.  Sometimes I feel bad for the guy because I’m not Susie Homemaker who makes meat and potatoes night after night, but I think he secretly thanks me for it. 😉 Plus, when I pull out recipes like this one, he can’t complain!  Comfort food that’s healthy.  Everybody wins.

I found this recipe for healthy (and paleo!) sloppy joes.  Don’t think it can get better than that?  It only requires a crock-pot.  Set it and forget it.  Boom.

Paleo Sloppy JoesIngredients:

  • 1 lb ground beef (I used extra lean)
  • 1 bell pepper, diced
  • 1 yellow onion, diced
  • 2 celery stalks, diced
  • 1 (8oz) can tomato sauce (no salt added)
  • 1 (6oz) can tomato paste (no salt added)
  • 1 1/2 tsp ground mustard
  • 1 tsp chili powder
  • 1 tsp salt
  • 1 tsp maple syrup
  • 1/4 tsp BBQ seasoning

Directions:

Place all ingredients in the crock-pot.  Stir and cook on low for 2-4 hours.

I served mine with a sweet potato instead of a bun!

I’m switching things up a bit today and participating in one of those blogger award surveys.  First of all, it’s funny that I was tagged for this because my entire life my dad has called me “Sunshine”, so it’s very fitting. 😉 Although I haven’t had (or made) the time for one of these before, I decided to see it through this time! I think it’s fun when other bloggers participate because I love learning more about them, so I decided it’s my turn to tell you all my random fun facts.

1. Do you own any pets? If so, what kind? Breed? Name?

Matt and I don’t have any pets yet.  I do beg for a Golden Retriever constantly, although we both are fully aware that we cannot take care of a pet right now because frankly, we can barely take care of ourselves.  It’s the truth, people.  We do have a family pet though, Ringo, the best Golden Retriever you will ever meet.  EVER.  He’s my dad’s best bud and the sweetest, most well behaved dog in the world.  Yes, I am biased, but he really is that great.  Ringo was recently diagnosed with bone cancer and lost one of his hind legs. 🙁  It was a very difficult time for our family but he is taking the treatments better than we expected.  Even though he’s our little tripod dog now, he doesn’t let that get him down!  He’s still the fun-loving pet we all know and love and was back on his feet in no time.  (See, the BEST) 😉

2. What is the last book that you read?

I recently read Ellen Degeneres’ book “Seriously….I’m Kidding” during our trip to New Orleans last weekend.  I needed a book on the fly and borrowed this from a friend because I absolutely love Ellen.  I think she is hysterical!  I thought it would be more of an autobiography but it was more like a little about her life, coupled with a lot of random thoughts.  Parts of the book were funny but overall, it was just a quick, light read.  Nothing to write home about. 🙂

3. Favorite way to sweat?

I love a good HIIT (High Intensity Interval Training) workout that leaves me drenched.  A quick workout that incorporates lots of moves like burpees and a combination of dumbbell and bodyweight exercises always has me hating it while it’s happening, but loving it when it’s over.

4. What is your favorite piece of workout apparel?

I love a good pair of Nike running shorts.  The ones that are not to short, not too long, juuust right.  I can always count on them not to ride up when I’m running and they give me enough room to do squats and other movements.

5. Salty or sweet?

Can I say both??  A big cheat meal for me almost always consists of pizza or French fries…or both, but if I have to choose, I would most definitely go with sweet on this one.  I am a certifiable choco-holic and proud of it.  If you put dessert or anything that incorporates chocolate in any way, shape, or form in front of me, you better watch out because I’m going for it.  Every. Single. Time.

6.  Favorite fashion trend right now?

Well, I don’t consider myself an especially “fashion forward” kind of gal so assuming this is still on trend, I love statement necklaces! My husband and friends like to call me out on the number of necklaces in my possession.  What can I say, it’s an addiction?  It’s actually a big day for me when I purchase an outfit that doesn’t incorporate a plain article of clothing and a statement necklace.

7. If you could go anywhere tomorrow, where would you go?

Hawaii!!!  I’ve been to Maui with my extended family, Honolulu for the Pro Bowl and Kauai for my honeymoon and every island is as perfect as the next.  It’s on our bucket list to go back and visit the other islands.  In fact, we are planning a trip for next October!

Taurus.  Stubborn, like a bull.  Sounds about right…

9. How many states have you lived in? Where?

Only two!  I say I’m born and raised in St. Louis, Missouri but I did spend four years in Charlotte, North Carolina as a child when my dad was transferred for his job.  I don’t remember too much about it, just that I missed the snow.  Now that I’m old enough to realize that you don’t just get to sled in the snow, you have to drive in it, shovel it, and scrape it, it’s lost a little bit of it’s luster. 😉

Sweet- Like everyone else, I’m really into pumpkin lately so I’d have to say these Skinny Pumpkin Cookies.  They satisfy my sweet tooth, without all of the guilt.  Oh, and did I mention the recipe only calls for 3 ingredients??

WIAW #4: Water Challenge & Egg White Muffin Recipe

Today’s What I Ate Wednesday post isn’t going to include as many photos as usual because, well, I wasn’t on my A-game today.  It happens, right?  I think you’ll get the drift. 😉

Water

I’ve been going to a chiropractor for about 2 years now for my scoliosis and am so glad I made the choice.  I’ve had scoliosis since I was young and never thought it would be possible for the curvature of my spine to improve.  My scoliosis wasn’t severe enough to warrant surgery or a brace and it honestly hadn’t bothered me until a few years ago.  I started having more pain in my lower back after walking for a long period of time and even sitting was getting uncomfortable because one side of my back was protruding more than the other, which caused one side to touch the back of a chair when the other wasn’t.  There were also visible signs that probably the average person wouldn’t notice but I certainly couldn’t keep my eyes off of the “obvious hump” on my left side…you know how that goes. 😉  Fast forward two years later and my spine is visibly straighter and the discomfort basically non-existent.  Anywayyyy, this long back story brings me to the first part of my WIAW post…water!

It is National Chiropractic Health Month and to celebrate, my chiropractor’s office is doing a month long event called the Healthy Habits Challenge. Each week they will focus on a different healthy habit and this week, it’s water!  They challenged everyone to at least set a goal of adding 8oz of water every day.  My personal goal is to drink at least 64oz of water a day.  Monday I succeeded and yesterday I probably got 3/4 of the way there.  Baby steps.  I really do feel so much better when I am hydrated so I’m going to carry this goal past this week and make it an ongoing habit!

Tip: if you are feeling slightly hungry but aren’t sure if you are ready for a meal/snack yet, drink a cold glass of water.  Sometimes it’s your dehydration talking, not your stomach!  Obviously if you are still hungry after drinking the water, then dig in!

Breakfast

As you all know, I am always on the lookout for a new quick go-to breakfast option.  I’ve tried making different egg casseroles before but nothing has really stuck.  I made my second attempt at egg “muffins” and this time I think I’ve found a winner.  My first attempt included frozen spinach…I won’t be doing that again.  It made the muffins waaay too runny.  This time I used fresh spinach leaves and the texture is much better.

You can use whatever combination of vegetables, meat and cheese that you want.  I used chopped peppers, spinach, deli meat and shredded cheese.  I subbed the shredded cheese with goat cheese for some of them because I’m obsessed.

Start by spraying the muffin pan with olive oil spray.  Then fill the cups halfway with the veggies/cheese/meat of your choice.

The fill the rest of the cups with egg whites.

Bake at 350 for 15-20 minutes, depending on your oven.

Lunch

My office provided pizza from a delicious restaurant in St. Louis called Dewey’s.  I had two small slices, one with goat cheese (see?!), artichokes and pesto and the other was a BBQ chicken variety.  I only ended up eating part of the goat cheese slice because the pesto wasn’t really doing it for me.  Luckily I also had some kale salad that I brought from home (so I wouldn’t fill up on pizza). 😉 I wish I had paused long enough to take a picture but anything that tries to get in between me and my pizza….

Mid Afternoon Snack

I’m trying to get back in the habit of eating only vegetables and cutting out the fruit after lunchtime.  Celery and peanut butter is a snack that satisfies my sweet tooth and still allows me to get in my veggies.

Roasted green beans and a black bean turkey burger.  Oldies but goodies.  Again, sorry for the lack of photos!  Apparently I was extra hungry today.
