I’m baaaaack! Did you miss me?

Well, dry your tears my friends. I’ve promised myself to get back in the blogging groove so to start things off again on the right foot, I’m going to share two of my favorite things with you – Football and Fitness!

Although it’s only May, the recent NFL draft has me in the mood for a little football in my life; specifically St. Louis RAMS football!  I love everything about game days, even in my cheerleading after-life…..whether I am watching from the comfort of my own home or cheering with a crowd of 60,000 people, it doesn’t get much better than football Sunday. 🙂  Once a fan, always a fan.

When I heard that the St. Louis Rams created the Lady Rams membership program, I jumped at the opportunity to join! Combining 3 of my favorite things- football, fitness and fashion? Winning.

Ladies Night at Training Camp

When: July (exact date TBD)

You will get an up-close look at the 2014 team at this private event.  If you haven’t been to an NFL training camp before, I would highly recommend it!  It’s a rare chance to see the players in their element, that up-close and personal.  Plus, all of the anticipation for the upcoming season makes for a really exciting atmosphere!

Girls Night Out

When: September (exact date TBD)

GNO. Enough said.  This event will be complete with food, drinks, a fashion show and guest appearances throughout the night…any guesses?

I also want to mention that a portion of the proceeds from the membership fees will benefit local St. Louis charities.  One of the many reasons why I am so proud to have been involved with the Rams, and continue to do so.  The organization is incredibly community-oriented and is constantly doing anything and everything they can to give back to the city and it’s fans.

Now, in the spirit of football and fitness (are you sensing a theme here?) I’ve created a workout you can do while watching the game on t.v.  I know, I know, football season is still months away but you can keep this one on the back burner, or even modify it to be 10 rounds of 10 until Sundays in the fall.  That will do the trick!

Dear Plantains, Where Have You Been All My Life?

It’s official.  I am obsessed with plantains and I have no idea why it took me so long to come to this conclusion.  A few weeks ago, I posted a recipe for Plantain Chips.  I didn’t think it could get much better….but then came the tortillas….and then the crackers.  I’m not going to pretend like I’m some genius who created these recipes out of thin air.  My (recent Paleo convert) mom told me about the tortilla recipe she found a few weeks ago and raved about them.   She also tried making pizza crust with them, which you better believe I will be doing sooner rather than later.  So of course, I had to share these little gems of recipes with you all!

The original recipe for the tortillas can be found here, at Fresh Tart.  The only difference is I used extra virgin olive oil instead of avocado oil because that’s what I had on hand.

DSC02028I definitely didn’t make mine thin enough but it ended up more like pita bread, which was amazing.  Matt couldn’t get over them!

Ingredients:

(Makes 12 tortillas)

  • 4 plantains, peeled and cubed
  • 2 cloves garlic, chopped
  • 1/3 cup extra virgin olive oil
  • 1/3 cup water
  • 1 tsp sea salt
  • 1/2 tsp baking soda
  • 1/2 tsp apple cider vinegar

Directions:

Blend everything together in a food processor until you get a hummus-like consistency.  Spoon onto baking sheet (I covered mine in parchment paper) and spread until about 1/4in thick, or thicker if you want “pita bread”. 🙂  Bake for 10 minutes, switch racks and bake for 10-15 minutes longer.

I mixed shredded chicken with avocado to eat with the tortillas and it was really good!

IMG_20140326_185244And because there was a link on the page for Plantain Crackers, I of course had to take a gander.  Since I was in Betty Crocker mode already and my food processor was already a mess (does anyone else despise cleaning that thing?!) I decided to give them a whirl in the same night.

DSC02027I actually think I like these better than the Plantain Chips!  They really feel and taste like crackers and are much easier to make.

I found the original recipe here, at The Paleo Mom.  Again, only difference is I subbed the coconut oil for extra virgin olive oil.

Ingredients:

  • 2 plantains, peeled and cubed
  • 1/3 cup extra virgin olive oil
  • 1/2 tsp salt

Directions:

Blend all ingredients in a food processor until you get a hummus-like consistency.  Spread on a small baking sheet and bake for 10 minutes at 300 degrees.  Cut into squares with a pizza cutter and continue baking for 50-60 minutes, or until lightly brown and crispy. According to the original recipe, sometimes hers took up to 80 minutes to bake.

Tush-Toning Gym Workout

Hello, my long lost friends!  I apologize for the lack of posts lately…things have been a little crazy around here.  Maybe crazy isn’t the right word, but just busier than normal.  Part of that is because Matt and I started the Whole30 challenge last Monday and I don’t think I realized how much prep is really needed to complete this the right way…more on that when I recap my meals later this week!  I’m also reeeaaalllyy trying to buckle down and study for my personal trainer certification but it’s easier said than done because life always seems to get in the way.  I’m one of those people who tends to bite off more than I can chew and then the perfectionist/over-achiever side of me stresses about getting it all done, and done RIGHT. Sometimes I need to realize that some things might have to give a little.  Maybe I don’t post as often as I did when I started blogging, maybe I don’t read and comment on my fellow bloggers’ posts as much as I would like (I still love you all!), maybe I don’t get my certification by March like I planned, maybe we eat eggs for dinner (more than once in a week) just because I don’t feel like cooking…but it’s OK.  Life is going to go on and it’s better when I learn to let go more and stress less. 🙂

Having said all of that, I just ask that you bear with me as I juggle this thing called life, like I know we all do!

Today, I’ve got a short and sweet leg workout, with more of a focus on the boot-ay. This is the workout I did before I filmed so like I said before, I was a little more tired than usual, so my form isn’t 100%…

So Much Snoozing, So Little Time…

A trainer once told me…

10 Minutes

I think I need to reintroduce that mantra into my life.

Backing up to Wednesday morning…

5:15 – Alarm sounds. Immediate snooze. Pretty sure I didn’t even open my eyes.

5:25 – Alarm sounds. Alarm off. One eye open this time.

6:00 – Both eyes open…CRAP!

Fast forward 15 minutes and I’m at the gym, with 30 minutes to get in and get out. I hadn’t put together a workout in advance (whoops) and I wasn’t really in the mood to do a multi-circuit, detailed workout, so I warmed up for 10 minutes on the bike and then decided to combine some of my favorite exercises into one workout and just go-big-or-go-home for 20 minutes straight. Here’s what it looked like!

20 Minute AMRAP

Between the kettlebell swings and split box jumps, my inner thighs were pretty sore for a couple days afterwards so mission = accomplished!

(For those of you who aren’t familiar, for Split Box Jumps, instead of starting with the box in front of you, start with one foot on the floor on each side of the box then jump up onto the box so your feet meet in the middle.)

“The Bachelor” Workout

Greetings from snowy St. Louis!  We got over 10 inches yesterday and are still trying to dig ourselves out. The high temp today is zero degrees. Ok, ok Mother Nature, we get it.  Winter is HERE! Maybe it’s time to channel my inner 5 year old and bust out the sled…

On a completely separate note…are there any other Bachelor lovers out there??  Tonight marks the first episode of the new season, featuring Juan Pablo and I’m pretty excited.  I haven’t missed a season yet, so why start now?  I’m a sucker for reality tv- cheesy or not. In honor of the new season starting, I created a workout you can do while you watch!  I figure, if I’m going to be sitting around rotting my brain, I might as well make an effort with my body. 😉  This probably won’t be a super high intensity workout but you will at least get your heart rate up and who knows, if it’s a cry-fest on night one your body might feel it!
